Laquered Duck
A 5-star Signature Dish from the days of the
Windsor Court under Kevin Graham (Top Ten in America
for an entire decade; #1 in the World twice), one of
Chef’s Mentors. We salt the ducks overnight to
remove moisture, then rinse and steep in honey
syrup. The effect is one of intriquing yet balanced
Sweet and Salty; unusual and delicious.

Pork Foyot
A dish developed by Claude Monet’s friend and
utilized as the entrée of our famous Monet Dinner
which takes place annually around Monet’s Birthday
on November 14th. A thick cut pork chop is crusted
in a topping of breadcrumbs, herbs, cheese, and
white truffle infused extra virgin olive oil to add
flavor and seal in juices.

Colorado Stuffed Filet
The dish with which we won the first of several
Statewide Governor’s Symposium Competitions, that
resulted in being chosen as lead chef of the
Millennium Delegation to Washington, DC. An 8 oz.
dry-aged Colorado Small Farm Filet is Stuffed with
Pine Nuts, Spinach and Asiago Cheese, roasted, and
finished with a Pernod Cream Sauce.

The World's Only Ultimate Beef List
Few (if any) would argue that
the Black Bear is the undisputed leader of modern
beef information in the state of Colorado, but
most (including almost all important beef
producers and processors) would say that it goes
much further than that. Having hosted four
separate blind beef challenges, and being the only
restaurant in the history of the world to have
compared all these beefs, we could easily be
peerless in respect to international elite beef
knowledge. It has always been our goal that our
customers benefit from this extensive
experimentation and analysis, and that has taken
final form in this “Beef List”. The first of its
kind in the world, and functioning much like a
wine list; you simply pick your steak, or if you
like, design a whole tasting experience.
Available as individual steaks or in the form
of a three meat tasting or five meat flight.

This is complicated, but we are trying to provide
a level of beef never witnessed before. It works
like this: We have featured SEVENTY FIVE DIFFERENT
steaks since we started this in 2000, and on any
given evening we will have many of them, usually
in several cuts and sizes. Your server will have
the exact specifics of what is available. We have
utilized all of the following at one point or
another:
USDA Choice, Angus Beef, Colorado Small
Farm Beef, USDA Prime, Piedmontese, G&C
Cold-Rinsed Beef, Premium Gold Angus, Maverick
Ranch All-Natural, Newport Dry Aged USDA Prime,

KOBE
A lot has been said about Kobe Beef since we
introduced it to the State of Colorado a few years
back. We even did the Beta Testing on the burger
meat now used so infamously in NYC, Vegas,
Chicago, and Kansas City (as seen on Martha
Stewart and Oprah). Of course, now it’s every
where. Even the Gold Label which we were exclusive
in for ALL of North America for TWO years is now
available elsewhere. I have not fought that
expansion. I am proud of my friends who produce
the finest meat in the world and support their
continued success. We do still offer the most
regular supply and at least two different types a
night available in different sizes. These days
there are many types of Kobe as well. American,
Waygu, Canadian, etc. We have featured all of them
at one time or another (and would be glad to
explain the difference), including steaks from the
original Imperial Herd. However, not many
Americans want to pay $250 for a 6 oz. Filet, so I
tend to stray away from those cuts. Usually, we
feature the best selling and most popular Kobe in
the world. The folks we introduced so long ago
from Snake River who are now so famous, and
Fukusuru, their leading sire, who is on record as
the most marbling animal in history. Well deserved
