Executive Chef: Rachel Brown
Young
and intrepid Rachel Brown, now Executive Chef, turned to the art
of fine food after a lifetime of study in classical music.
Hailing from the East Coast, she has experience in various
genres of food including trendy tapas bars and high end boutique
hotels. Chef Brown moved to Colorado in 2000 and began working
at the Briarhurst in 2001. She has worked her way through the
ranks of the historical manor becoming the youngest female
Executive Chef in the history of the Briarhurst. At the
Briarhurst Manor, Chef Brown has cooked for dignitaries,
executives, large corporate events, and intimate engagements.
She inspires her staff with the vision of “field to plate”
cooking. Working with a network of local farmers, ranchers, and
butchers, she presents a fine dining experience that is
deliciously seasonal while promoting the sustainability of local
organic family farms. Chef Brown’s menus are composed of
classical dishes and innovative flavors all ingeniously prepared
with local flare.
