We welcome
you to come into our restaurant to experience the sights, sounds,
and flavours of another world, of Authentic Moroccan Cuisine.
I was born and raised in Fez, Morocco to Lala Zoubida
Benjelloun and Haj Abdelah Benjelloun. When I was very young, I
began my cooking career under the kind care of my mother. After 10
years of learning the art of Moroccan Cuisine and hospitality, I
felt it necessary to expand my culinary skills and so I migrated to
Switzerland to learn the art of French Cuisine. I studied for 6
years under the worlds finest chefs at the Hotel Merguere;
2 years as an apprentice, 2 years as an assistant sous-chef, and
finally 2 years as the sous-chef.
Driven by my need to master the culinary arts, to take up a
sous-chef position with the Fairmont Hotel in Downtown Denver at
their prestigious restaurant Moulin Rouge. After a short 3 months, I
became the restaurant's chef and continued to create wonderful
entrees for the next three years.
Following those two short years, The Park Suite Hotel hired
me and appointed me to run their Restaurant, Catering, and Banquet
services as the head chef, which I accepted gratefully for the next
3 years.
Finally, seeing the opportunity for my own restaurant, I opened
Palais Casablanca Authentic Moroccan Cuisine. The menu continued to
grow and the idea came for me to open a full-service Moroccan
restaurant. We ventured to open My Wife and I Palais Casablanca
Authentic Moroccan Cuisine.
Over 20 years of experience in cuisine has sharpened my senses on
the wonder of serving each and every customer and making their
dining experience something to remember. Again, please allow us to
please your pallet and delight your senses. I personally invite you
