Note: With the Inauguration of the School as

and the new 98.9FM World Cuisine Class Competitions, the amount
of regular open public classes has been decreased slightly. We
will however always maintain our commitment to bringing these
three-hour fun classes to the public. Thank you for your
continued support.
Sept. 2nd: Grillin’ and
Chillin’! A Labor Day weekend Tradition. More fun than
serious, we cook at Paragon out by the pool. Subjects are
grilling and frozen drinks.
Sept. 16th: Master Chef
Victor Matthews and his lovely bride Rhianna (Mrs. Matthews)
will celebrate their Sept. 13th marriage at an open
reception at Paragon from 4pm until late into the evening.
Anyone who knows the couple and would like to drop by and wish
them well is welcome. The bar will be open and students will be
cooking hors d’ouevres all evening (free food, cash bar).
Everyone is invited to share in their joy! Gift table
arrangements and RSVPs are being made through the Groom’s Mother
Darlene at 578-5743 and/or 661-5489. We do know that the couple
is saving for a house. Any cards or mail should be sent to the
school at 3125 Sinton Rd. Colorado Springs, CO 80907.
Sept. 23rd: The first
98.9FM Class. This one focuses on the Food and Wine of Northern
Italy. Slots will be awarded to listeners throughout the week
of 9/17-9/21. Ten additional students can get in for $98.90.
If you want this one you better reserve early. NO discounts or
coupons can apply.
Sept. 30th: This entire
Weekend please turn your attention to Tulsa, Oklahoma. Our
Pastry Instructor Heidi Cottrill will be in the National Wedding
Cake Championship (as seen on the Food Network)! We are very
proud of Heidi and plan to be there cheering her on.
Oct. 7th: Cooking 201.
A follow up to our most popular class. Cooking 101 was 4 hours
of all the basics but there was not enough time to practice
knife skills or work on stocks and soups. So, we are following
it with this new class. Picking up where the basics left off.
Oct. 14th: Last Class
before Fall Break. Introduction to “the Masters Series”. These
Classes will focus on the works of several related Masters. The
First Class is in Honor of the Mentors of our Dean Victor
Matthews. “MASTERS OF BRITAIN”. Anton Mosimann, Gordon Ramsey,
and Kevin Graham will be covered.
Oct. 21st: Wines of
France with Sommelier Gabriel Roddy. This legendary overview of
France takes many hours but is a lot of fun. It runs $99 and
there are many wines to be tasted and regions explored. $25 for
full time students (due to per person wine expense).
Oct. 28th: Wedding Cakes
101. Basic Recipes, Design, and Decorating will be covered by
National Wedding Cake Championship Contender Heidi Cottrill.
