Union – An American Bistro Union bistro has opened in the old Pino’s Place location at 3 Wilcox, in downtown Castle Rock. It is owned and operated by, not 1 or 2, but 6 partners from PB&J Restaurants Inc. (the company who owns Yia Yia’s in the DTC) Between the partners they have a combined 100 years of restaurant experience, working in all facets of operations. Hands on, is the approach, making sure that every guest that enters UNION feels like part of the family. Partners include: Catherine Reeves, Joe Kilanoski, Dennis & Christina Dickey in front of the house and Chef Owners Tom Lee and Kim Heideman. At any given time you may see any or all of them when you enter the doors of UNION. The name UNION was chosen for their restaurant for two reasons: 1. Their partnership is an UNION of people who have a passion for exceeding the expectations of their clients. 2. Bringing together great food and great service creates great dining, and that is a combination that is hard to find in the “Chain” restaurant environment. The cozy, upbeat UNION is the epitome of a friendly neighborhood restaurant, inviting locals and visitors to enjoy the modern American culinary experience. UNION offers creative, seasonal menus served in a warm and comfortable setting in the heart of downtown Castle Rock, using quality ingredients from around the block and around the world.

Reservations are accepted but not required, they only book 50% of the restaurant, and the remainder is available for walk-in or call ahead seating. UNION is a non-smoking restaurant and hosts one of the best Happy Hours you can find.
